Courgette Recipes

Following on from the other 2 recipes on my new Instagram account @fayevourite_ways “4 ways with Courgettes”. A very understated vegetable that can be used in so many tasty ways and can be a great aid in weight loss for bulking out recipes like my delicious porridge or by adding a wonderfully soft texture and lightness to my muffin recipe. Porridge: serves 1

Ingredients:

100g courgette grated

25g oats

200ml water

75ml milk (dairy, coconut or almond milk all work perfectly)

1 heaped tsp cinnamon

1/2 tsp ginger powder

1 tsp honey/maple syrup

1 tsp protein powder of choice (optional – my favourite is chocolate brownie by MyProtein)

 

Method:

Grate the courgette into a saucepan and add the oats. Pour in the water and milk and stir to combine. Place onto a hob and bring to the boil. Turn the heat down to simmer for 5-10 minutes depending on how thick you like your porridge. While simmering add the cinnamon and ginger and protein powder if using (“Proats”!). Stir well and ensure to keep stirring every now and then and turn down if bubbling too much. Towards the end add the honey, stir and then serve. How big is that bowl! And all for only 200 calories but packed with protein and filling ingredients! Once you’ve tried it you won’t go back!

 

Courgette Muffins: Serves 12

Ingredients:

200g courgette grated

250g ground almonds

4 tbsp flour (spelt, rice, coconut etc all work well here)courgette muffins

2 tsp cinnamon

1 tsp ginger

zest of 1 lemon

juice of half a lemon

75ml of oil (olive, coconut or vegetable)

1 egg beaten

100g honey/maple syrup

pinch of salt

 

Method:

Preheat the oven to 170C fan/gas mark 3/190 conventional.

Very easily add all ingredients one by one into a large bowl and combine well.

Spoon out into muffin cases set in a muffin tin so all even (unless making a greedy one for the chef!).

Place in the preheated oven for 20-25 minutes until golden brown and when you insert a knife into the centre it comes away clean!
